日本の伝統的なお菓子、和菓子。

ケーキやクッキーなどの洋菓子ももちろん美味しいけれど、あんこの優しい甘さとほろ苦い緑茶の組み合わせはホッとしますよね。
特に上生菓子といわれる「練り切り」の繊細で芸術的な美しさは、日本を訪れた多くの観光客を虜にしているようです。

今回は上生菓子・練り切りに関する英語表現をまとめましたので、英語学習も兼ねて「日本のお菓子を英語で説明してみたい」という方へ、ご参考になれば幸いです。

和菓子の簡単な説明

「和菓子」は、英語では主に以下の3つの言い方が一般的です。
confectionery は「製菓」のような、やや固い響きがあります。

  • Japanese sweets
  • Japanese-style sweets
  • Japanese confectionery

“Wagashi” refers to traditional Japanese confectionery.
(「和菓子」とは、日本の伝統的なお菓子のことです。)

Japanese sweets, or wagashi, are well known for their artistic handcrafted sweets.
(和菓子は芸術的な手作りのお菓子で有名です。)

Wagashi is made in a wide variety of shapes and preparation methods. 
(和菓子には、実に様々な形とつくり方があります。)

Wagashi reflects festivity and the beautiful Japanese four seasons.
(和菓子は祝祭や日本の美しい四季を映し出しています。)

Wagashi is a traditional Japanese confection made from plant-derived ingredients.
(和菓子は植物由来の材料を使った日本の伝統的なお菓子です。)

The main/basic ingredients of wagasi are mizuame (starch syrup), mochi (rice cake), wheat flour, and anko (red bean paste).
(和菓子の主な材料は水飴、お餅、小麦、あんこなどです。)

There are “Tsubu-an” (paste containing pieces of red bean skin) and “Koshi-an” (smooth bean paste).
(あんこにはつぶあんとこしあんがあります。)

Mizuame is a sweetener made by converting rice or sweet potato starch into syrup.
(水飴は、お米やさつまいもなどのデンプンを糖化させてつくったシロップ状の甘味料です。)

Wagashi goes well with Japanese tea.
(和菓子にはやっぱり日本茶が合います。)

Wagashi is often served with green tea or matcha.
(和菓子はよく緑茶や抹茶などと一緒に供されます。)

We enjoy the combination of sweetness and bitterness.
(甘さと苦さの組み合わせを楽しみます。)

Red bean paste used for anko (sweetened paste) is rich in dietary fiber.
(あんこに使われる小豆は食物繊維が豊富です。)

If the moisture content of the wagashi is less than 20%, it is called higashi (dry wagashi), ones from 20% to 40% is han-namagashi (semi-baked wagashi), ones above 40% is namagashi (fresh wagashi).
(水分が20%以下のものを干菓子、20%〜40%のものを半生菓子、40%以上のものを生菓子といいます。)

Wagashi is inspired by Buddhist beliefs, which discourage the use of animal products.
(和菓子は、動物性の素材を使わないという仏教の信念に触発されています。)

和菓子の説明に使える単語

  • 餅米:glutinous rice
  • あんこ:(sweet) red bean paste または adzuki bean paste など
  • つぶあん:mashed sweet bean paste
  • こしあん:smooth sweet bean paste
  • 白あん:white bean paste
  • うぐいすあん:sweet green pea paste
  • 芋あん:sweet potato paste
  • きなこ:soybean flour/powder
  • 黒ごま:black sesame powder
  • 黒蜜:brown sugar syrup または dark molasses
  • 菓子切り(菓子楊枝):toothpick used for cutting sweets

上生菓子・練り切り

生菓子の中でも、練り切り、羊羹、こなしなどのお菓子は「上生菓子」と呼ばれています。

Jo-namagashi (Nerikiri) is an artistic Japanese confectionery that contains more than 40% water and is created into elaborate, beautiful forms.
(上生菓子とは、40%以上の水分を含み、精巧で美しい形につくられた芸術的な日本のお菓子です。)

Nerikiri, a traditional Japanese confection, is made by mixing shiro-an (sweetened white bean paste) with gyuhi (made of glutinous rice flour).
(練り切りという伝統的な日本のお菓子は、白餡と求肥を混ぜてつくります。)

Jo-namagashi is made of white bean paste and gyuhi (made of glutinous rice flour) mixture that is kneaded with sugar and water.
(上生菓子は白餡と求肥を混ぜてお砂糖とお水で練り上げたものです。)

Nerikiri is a type of Japanese sweets made by kneading and mixing sweetened white bean jam and glutinous rice flour.
(練り切りは、甘くした白餡と求肥を練り混ぜて作った和菓子の一種です。)

Gyuhi is a type of mochi. It has a soft texture and is made from rice flour, which is mixed with water and steamed, after which it is kneaded with sugar and mizuame.
(求肥とはお餅の一種で、米粉をお水と混ぜて蒸した後、お砂糖と水飴で練った柔らかい食感のお餅のことです。)

Jo-namagashi can be colored and sculpted into a variety of shapes, from flowers to autumn leaves.
(上生菓子は、色をつけたうえでお花や紅葉などの形に成型します。)

Nerikiri captures the colors and forms of the seasonal beauty of Japan.
(練り切りは日本の季節の美しさを色や形で表現しています。)

Jo-namagashi represents seasonal items or flowers and is hand-made with shiro-an (sweetened white bean paste) and natural food coloring.
(上生菓子は、季節のものやお花などを、白餡と天然の食品用着色料をつかって表現しています。)

Nerikiri and other Namagashi, are often served in the Japanese tea ceremony.
(練り切りなどの生菓子は、よくお茶会用のお菓子として供されます。)

You should eat Namagashi after cutting it into small pieces with Kuromoji (a special toothpick used for cutting sweets).
(生菓子は、「黒文字」という菓子切り用の楊枝で小さく切りながらいただきます。)

You can take the sweet bun with your hand.
お饅頭は手でいただくことができます。)

It is too beautiful to eat!
