  • Eisbein: dish of salted and cooked ham hock
  • Schweinshaxe: roasted ham hock
  • Schweinebraten: roast pork with black beer sauce
  • Schweineschnitzel: thin slice of pork fried in fat
  • Entenbraten: roast duck meat
  • Hendl: roast chicken
  • Maultaschen: soup with German ravioli
  • Leberkäse: German meat loaf
  • Labskaus: salted meat or corned beef (a specialty from Northern Germany)
  • Knödel: boiled dumplings
  • Frankfurter Grüne Soße: a sauce made with hard-boiled eggs, oil, vinegar, salt and seven different kinds of fresh herbs (borage, chervil, cress, parsley, salad burnet, sorrel, and chives)
  • Spargel: white asparagus with hollandaise sauce
  • Spätzle: German short pasta made with eggs
  • Sauerkraut is finely cut raw cabbage that has been fermented by lactic acid bacteria
